Vegan and vegetarian resources

I eat and prepare a great deal of vegetarian and vegan food even though I eat fish (pescatarian) with the emphasis on healthy ingredients.

Lots of lovely tomatoes, onions, aubergine and beetroot in my Veg Basket this week. Using dried chickpeas in my pressure cooker is fast and cheap but tinned are good too. I roasted the left over chickpeas until they were crunchy and tossed them in chilli,, a little oil and salt for a fabulous snack or to have with drinks.

The runner beans from my garden and the carrots, beans, cabbage, kale and herbs from this week's veg basket inspired this filling soup. The addition of beans and pasta make it a balanced meal in itself. A trip to my local international grocer to stock up on pulses an spices drew me to the Padron and mixed peppers in the fresh produce.

You can use more or less any combination of your favourite root veg. From my veg basket I have roasted a few beetroots, carrots, smoked garlic and onion tossed in a little olive oil and salt.

Blitzed some day-old bread into breadcrumbs and mixed the whole lot with some pulses, lemon juice and a scoop of tahini then shaped into patties, browned on each side and finished in the oven. I also popped a batch in the freezer separated by sheets of parchment.

Bowls of goodness make interesting lunches and healthy meals and can contain almost anything that takes your fancy. Think textures, add sweet/sour/spicy and some grains for a balanced, power-filled bowl. This photo is from Bowls Of Goodness Nina Olsen and the recipe a variation of her Buddha Bowl. I don't really measure ingredients as I cook more by instinct, tasting along the way and adjusting accordingly so don't be afraid to do the same and substitute any ingredients as you wish.

I wouldn't use sugar but replace it with medjool dates of the same quantity. Making these a very healthy treat.
