Tasty High protein unprocessed vegetarian meal option with superb texture

Ingredients /Method /Utensils /Equipment /
Quinoa Burger Ingredients

Quinoa (Colour unimportant I used a brown and white mix ) Veg stock cube  /Carrots /Spring onion /garlic /Fresh herbs to taste / Chilli paste /Bessan  (Chickpea flour to help bind  ) /egg wash  for sticking the bread crumb to the patties /plain flour / Bread crumb (I put 3 slices of fresh frozen bread in a blender and rendered it down into crumb Seasoning


Fresh ripe avocado /garlic /lime juice /salt /pepper /pinch of sugar to increase flavour and some bruinoised red onion to be folded in after blitzing and some olive oil to coat the surface of the guacamole to stop oxidation

Oven Chips

King Edwards cut into wedges /Garlic Fresh Rosemary Sea Salt Pepper .Cold press Rape seed oil .


fine sliced  Cabbage /Fine sliced onion ./salt pepper /mayonnaise /grain mustard /Roasted poppy seed


Gherkin /Tomato/Onion /Leaves (I used land cress it was all that was in the garden)


Grater /chopping board /sharp knife /Blender (Food Possessor )/Whisk /Bowl  Frying pan than goes into an oven /Fish Slice /Pan for cooking Quinoa


Cook quinoa in a pan in vegetable stock with just enough liquid to cooked grain ratio (same as rice ) When cooked tip into a mixing bowl and add grated carrot /sliced spring onion /garlic /herbs and chilli seasoning and mix together with hands till it sticks together I added some Chick pea  to help this, Then form into shape pressing tightly to bond the grains .

For the panne whisk just eggs or a mixture of egg and milk together and place into a container big enough to move the liquid over the burgers with out breaking them up /season some flour to coat the outside of the burgers and put into a sensible sized object and place the bread crumb into a sensible container to work the crumb completely round the burgers so that no surface isnt covered and then leave to firm up  .


Just blitz all the ingredients except the onion with a stick blender oer (Processor ) then add the onion and pour a thin film of oil over the top to stop discoloration due to oxidation

Wedge chips .Pre heat oven and coat with oil and seasoning .I included garlic and rosemary too and place on a roasting tray

Slaw cut and mix all the ingredients and bind with mayonnaise mixed with French or grain mustard

Garnish cut as for normal hamburger and cut bap

Method Heat oven to 200 degrees 

Heat frying pan on hob with some oil and gently place the burgers in the pan and don't flip them over till the pan side is golden then place in the middle oven shelf and place the chips on the top shelf .Keep an eye on them so they don't burn they shouldn't and remove when cooked through and golden colour and do the same with the chips .I put mine in 1st ,then took them out when cooked Then placed them back in to re heat .They took up no oil at all

Baps Place the cut sides onto the oven shelf to toast before assembling for eating

When every things cooked take all the components out and dress on a plate and serve
